Basic Pancakes |

2 cups flour |
Sift flour, baking soda, sugar and salt. Beat eggs; stir in milk and oil. Mix in dry ingredients and beat to a smooth batter. Pour onto hot griddle or frying pan to desired pancake size. Cook until bubbles appear on surface and underside is golden-brown. Cook other side. |

1 cup granulated sugar |
Put sugar, syrup and water in saucepan and set over direct heat. Stir until sugar is dissolved, then cook without stirring to 250 ° F.Add butter and Cook to 280 °F (for soft butterscotch) or 300° F (for hard butterscotch).Remove from heat, add vanilla and pour on greased slab. Mark while warm and break when cold into pieces. |

My Favorite Chocolate Chip Cookies |

7 cups flour |
Heat oven to 375 °F. Combine Crisco, brown sugar, milk, and vanilla in a large bowl. Beat at medium speed until well blended. Beat eggs into mixture.Combine flour, salt, and baking soda. Mix into creamed mixture just until blended. Stir in chocolate chips. Drop rounded tablespoonfuls of dough 3 inches apart onto an ungreased baking sheet. Bake on for 8 to 10 minutes, up to 13 for crisper cookies. Cool for 2 minutes on baking sheet. Place on foil covered counter to cool. Makes about 12 dozen. (A decent size batch!) |
